Cylindrical with flat faces or slightly concave, the crust wrinkled, due to the marks left by canestrato of June. Yellow more 'or less intense depending on its age, in which pecorino 4/6 months, the compact paste, with little holes, is white or pale. Aromas of fresh, floral and spicy flavor, fruity and spicy, especially if seasoned. The nose is the strong smell of sheep's milk and hay. The taste is crumbly and grainy with a pronounced tangy taste.
