The Quadra
This cheese is similar to Raschera and can be plain or with truffle in it. It is called after its square shape, which was once a useful trick to easily carry the cheese on the back of a mule. It is made from raw cow’s milk and its rind can be a bit irregular because of the use of hand pressed linen cloths as in the past. This cheese has a sharp taste.
The ripening process takes place in underground stone caves that guarantee the best moisture level for maturation.

Characteristics
The cheese is white, hard and with small holes. The thin, inedible rind is straw-yellow and turns into brown as the ripening process goes on. It is a semi-fat cheese with a strong, sapid and balanced taste.
How to savour it
It can be served on its own and used in recipes such as fondues and vol-au-vent. It is the ideal solution in the preparation of pasta dishes or fresh salads. Recommended wines are young soft reds when the cheese is fresh, whereas it can also be accompanied by fine and aromatic white wines such as Sauvignon.
