This caciocavallo is rectangular with a thin smooth crust of straw-yellow color. The dough is compact and homogeneous. The taste is spicy thanks to the maturation. Ideal for starters (or accompanied with some wine) and pasta and rice dishes. Thank to the maturation this Caciocavallo is harder than normal. Therefore, it makes an excellent grating cheese.
Matured: spicy taste due to the maturation of 12 months. Ideal as a grated cheese or for filling ravioli. Delicious with meatballs.
