The grapes: 100% malvasia nera di Lecce
The vineyard: parcels trained by the alberello pugliese and Guyot systems on deep, dry soil of a limestone-clay-silica nature.
The vinification: the grapes are picked very early in the morning and are immediately taken to the cellar to be pressed. The vinification takes place at a controlled temperature in stainless steel tanks with 10-12 days maceration and programmed remontages.
After the malolactic fermentation the wine develops in steel until the time of bottling.
The wine: strong ruby-red colour; pleasant and intensely fruity bouquet; full and balanced, velvety flavour, with hints of sweet liquorice.
Analytical details: 14% alcohol; 5.20g/l total acidity; 3.50pH; 3.8g/l residual sugar; 27 g/l dry extract.
Optimum keeping: 5 years in bottles stored horizontally in cool, dark conditions.
Food matches: savoury first courses; grilled red meats; mature cheeses.
Serving temperature: 18-20°C.
