AGLIANICO DEL VULTURE DOC
Since time immemorial the grape variety Aglianico, known in antiquity as Ellenico, has been cultivated on the plateau around the extinct volcano of Vulture.
The grapes: 100% aglianico del Vulture.
The vineyard: parcels trained by the simple or double Guyot and cordone speronato systems on hilly ground of volcanic origin.
The vinification: the bunches, picked by hand towards the middle of October, are traditionally vinified with 15 days maceration and a single daily remontage. The wines are devatted, with small quantities of sugar still present. After the racking and the malolactic fermentation, they are transferred to stainless steel tanks and then to barriques for ageing for a short time.
The wine: ruby-red colour; complex bouquet with strong notes of ripe fruit; elegant and intense flavour with excellent structure.
Analytical details: 13% alcohol; 5.60g/l total acidity; 3.50pH; 31 g/l dry extract.
Optimum keeping: 4-5 years in bottles stored horizontally in cool, dark conditions.
Food matches: savoury first courses, roast or braised red meats, game, mature cheeses.
Serving temperature: 18-20°C.
