The grapes: 90% negroamaro, 10% malvasia nere di Lecce
The vineyard: parcels cultivated on deep, dry soil of limestone-clay-silica nature.
The vinification: the grapes are picked very early in the morning and are immediately taken to the cellar where they undergo a gentle pressing. The must has a very short contact with the skins and is made to ferment at a controlled temperature in special steel tanks.
The first wine is bottled at the end of January.
The wine: bright pink colour; floral bouquet; dry, full, elegant and clean flavour, with a light aftertaste of fruit which lingers in the mouth.
Analytical details: 12,50% alcohol; 5.50g/l total acidity; 3.30 pH; 2.50g/l residual sugar; 23g/l dry extract.
Optimum keeping: to drink within the year.
Food matches: Italian hors d’oeuvres, savoury first courses, fish, white meats, young cheeses.
Serving temperature: 8-10°C.
