PRODUCTION AREA: Production area of Nebbiolo d'Alba. Type of soil: sandy, with silt and clay veins, rich in mineral salts.
VINEYARD CULTIVATION: Guyot pruned espalier, on steeply sloping hills facing south-east.
Yield per hectare: 63 hectolitres.
VINIFICATION: After the manual harvesting of the grapes, which took place in the first ten days of September, the Nebbiolo is pressed and left to macerate for about 6 hours. With the soft pressing, the skins are separated from the must, which is decanted in a thermo-conditioned tank at a controlled temperature of 18° C. The fermentation ends in about 20 days. In the spring of the following year the wine was bottled with its own yeasts for the second fermentation, with natural froth.
