Kamut is an ancient grain gaining popularity as a nutrient-rich alternative to the traditional durum wheat. It contains 40% more protein than conventional wheat and has a very high vitamin and mineral content. It makes for fantastic tasting pasta, with its buttery, rich flavor. It is also easily digestible, so can be appropriate for individuals with a slight wheat sensitivity. However, it does contain gluten.
