The Murgia is a rural area with farms surrounded by green and pristine pastures. Here, the cheese-making is deeply rooted in history - this is especially true for the production of pasta filata cheese like mozzarella.
Here, the dairy farmers Michele Olanda and his wife Carmela Fucci in 1988 have founded the cheese factory Olanda. Since that time they devote themselves with commitment and passion to the artisan production of fresh cheese. The philosophy of the dairy factory Olanda is high quality by producing small quantities. This means that it is not important how much, but the manner in which is produced.
Michele and Carmela focus on the production methods and provide in this way excellent burrata, mozzarella, scamorza, ricotta, Caciocavallo and Manteca (a scamorza with a heart of butter).
In addition, they produce extra virgin olive oil from the olive variety Coratina and classic Apulian Taralli.
