The red tuna in the Mediterranean is fished on the coast of Trapani from May to April, because the tuna migrates at this time past the coast.
The tuna is freshly processed and therefore has such a good consistency.
The fillets remain whole and they are piece by piece manually filled in the jars. The processing is done entirely by hand and only with the help of a knife.
The tuna is an excellent main course. Enjoy it just with a little olive oil and a few splashes of lemon.
