In the Mediterranean tradition, this good and healthy ingredient (the tomato) was converted into a real culinary masterpiece: in dried tomatoes.
Dried tomatoes are made only in the summer. Drying in the sun is one of the oldest methods of preservation at all.
The sun-dried tomatoes are indeed dry but not hard, sweet, salty and pleasantly acidic with a unique and distinctive flavor.
They can be stored for some time in the refrigerator. For a longer preservation period they should be pickled it in oil with some garlic, capers, oregano and chili.
