Piedmontese Fassona-meat Bresaola (Dried Beef), it is an excellence completely made by Mscelleria Mastra Alebardi Butchery.
This Bresaola (Dried Beef) is obtained beginning with the use of fresh meats personally slaughtered in our butchery an produced there, guaranteeing the origin of the raw material: Magatelli (eyes of round) exclusively obtained from Piedmontese Race Bovines, which have bigger dimensions than the others.
We season it only with spices, salt, pepper and red wine, at least 90 days long aging.
It has a live-red colour, and the diameter is larger than the classic Bresaola (Dried Beef).
It has a sweet flavour, the species are very light and not intrusive, the taste of the meat really stands out.
