The Culaccia consists of lean meat and the rind of the rear leg of the pig. The taste is fine and delicate. The cold cut practically melt on your tongue.

The Culaccina® is salted first by hand and then left to dry in a dry and well-ventilated place. Maturation takes place in ever cooler spaces with increasing humidity.

The last stage of maturation is important since it determines the flavor of the product. This happens in the famous cellars of Salumificio Rossi which are slightly ventilated and damp. This creates the unmistakable taste.

Year after year, the special microclimate of the Salumificio has developed certain yeasts and molds that can arise only over a long period of time. Imitators have no chance.

After half of the ripening period the Culaccia® is coated with fat, salt and flour. This layer of fat keeps the Culaccia® soft and moist and protects it.
