Production recipe

produced with Castellero Barolo D.O.C.G. 10 or more years of age. Following the original recipe, the wine is infused with natural plants including quinine bark (China Calissaja), rhubarb root, gentian and other aromatic herbs. Fortified with alcohol to reach 17% alcohol by volume, it is then aged in 700 liter oak vats for at least one year prior to bottling

Organoleptic characteristics

Color: Brick red with orange highlights

Nose: Intensely spicy, with notes of cinnamon and rhubarb

Flavor: Good balance of the quinine’s bitterness and the sugar’s sweetness. Dry and slightly tannic finish, recalling aged Barolo

Food pairings

Perfect after-dinner drink. Wonderful paired with bitter chocolate, dry biscuits or cookies and “sweet salami” (made from chocolate and nuts)
