Tasting notes: Deep straw yellow color with greenish reflections. Intense and penetrating nose, complex and elegant. In its youth, notes of freshness emerge with hints of aniseed that, when ripe, express tones of high minerality with hints of ripe dates. Dry, full and harmonious flavor, very thick and salty grain. The notable salty note makes it lively and with a long aromatic persistence.

Pairing: Excellent with fish dishes and medium cured cheeses, white meats.
