Inziolia is dominant, it is supported by some selected Chardonnay cultivated in the Ninotta and Milici area. Planted at the 15th year.
Type of conduction:
Guyot pruning with renewable shoots and selection of the buds, protection form the oxidation thanks to the thick vegetation; the harvest time is ideal to sustain the complexity and the structure of the wine.
The grapes, picked up in small pierced boxes of 14kg each, are stocked in refrigerating rooms at 3 degree for 24-48 hours. Then they're softly pressed by pneumatic wine presses.
After that they are poured and fermented ,at a controlled temperature with selected yeasts, partly in steel(90%), and a small part in French oak trunks(10%).
During the 8 months refinement, the wine constantly undergoes to a "batonnage" to support the yeasts action. After assembling the wine from the tanks and the one of the barriques and a light percolation it is enbottled.
The maturation in the bottle will support the development of the tertiary aromas.
Intense yellow palette coloured.
It effuses fresh orange blossom floral aromas, fruity pineapple and banana, some white pepper marks.
It has a full flavour with caloric and mineral marks that gives it balance.

starters, fish, withe meats, mushrooms and truffles
Ideal temperature: 10 degrees.
