Description:
Wine obtained from Trebbiano di Lugana grapes. The careful vinification, with particular attention to the selection of pressing fractions, the refermentation in the bottle and the stop on the lees for at least 48 months give this product exceptional qualities of freshness and complexity. On the nose it explodes with balsamic arrogance of sage and limoncella with an unusual cherry background; the taste is powerful and sapid with acidic ribs contrasted by great creaminess and oily fatness to close a mouth of almost infinite persistence.

Manual harvest in boxes, soft pressing of whole grapes, alcoholic fermentation made by selected yeasts at controlled temperature.

Refermentation in bottle and subsequent stay on yeasts for a period of at least 30 months. Manual unblocking by freezing the bottle neck.

Alcohol content 13.20% vol; Total acidity 6.5 g / l; Residual sugar 2,0 g / l.
Organoleptic Analysis
Pale yellow color, with fine and persistent bubbles, balsamic aromas and yellow fruits. Savory, dry and mineral taste supported by creaminess and almost oily fatness.
Pairings
Exceptional throughout the meal with fish dishes and especially with raw food. For those who dare more with the cotechino, the pot salami and hard mature cheese.
