Manfredi Rosso - Aglianico del Vulture DOC
This is a wine that springs from the desire to express Aglianico in a smoother version too, thanks to a particular system for drying the grapes on the plant. Drying takes place using a technique known as "cutting the shoot" which envisages cutting the fruity head when the grapes are ripe. This operation interrupts the flow of sap between the roots and bunches so that the part of the plant that is detached from the trunk for all intents and purposes has to draw water from the grapes themselves for a few days. It is precisely as a result of this particular and natural dehydration phenomenon that the grapes undergo slight drying that concentrates the fruity scents and smoothness of the tannins. It expresses itself with balsamic notes accompanied by hints of cherry and morello preserved in spirits and of persimmon jam. It is smooth on the palate with soft silky and enveloping tannins and a round, lingering and fruity finish accompanied by an engaging light sugary residue as in the style of Re Manfredi.
The grapes: 100% Aglianico del Vulture
The vineyard: Grapes coming from a 6-hectare hillside vineyard located 500 metres a.s.l. on soils of prevalently volcanic origin. The vines are old plantings trained using the vertical trellising system and with a pruning technique that encourages the natural ramification of the vine.
The wine: A ruby red colour; an intense perfume with balsamic and fruity notes that recall cocoa and black cherries. It is smooth on the palate with silky enveloping tannins. The finale is round, lingering, fruity and creamy. The wine provides a modern vision of Aglianico del Vulture in total respect for tradition and the varietal characteristics. This young and modern style and the unmistakeable minerality typical of the volcanic soils, gives this wine an attractive and light sugar residue in the style of Re Manfredi.
Analytical data: alcohol 13.80% vol.; total acidity 5.59 g/l; pH 3.4; sugars 7.5 g/l;
Ideal conservation: 2-3 years in bottles laid on their sides in the dark.
Serving temperature : 16-18°C
Food pairings: baked pasta, red meats, braised beef and mature cheeses.
