Grapes: Cabernet Sauvignon 45%, Cabernet Franc 25%, Merlot 30%.
Harvest period: From 11th to 18th October 1991 with careful hand selection of the grapes before pressing.
Vinification: Maceration in contact with the skins for 22 days, final alcoholic fermentation in small new oak barrels, where also the malolactic fermentation takes place. Continued maturation always in these small new oak barrels for a period of 13 months.
Bottling: December, 1992.
Bottling aging: 14 months before sale.
Description: Red-garnet color not too intense with a strong and brilliant violet hue. Initially the bouquet stuns with its freshness and aroma: intense, full and persistent. Flavors of red berries, especially cherry stand out. Delving deeper, one finds more refined and elegant sensations, such as plum, violet, vanilla, cacao and a toasty, character, aroused by a lovely herbaceous note. In the mouth one confirms a wine of good body and structure. Perfect balance of the acidity marks this as a wine for potentially long aging. While not a high tannin level, it amalgamates perfectly with the fruit. Repeated in the mouth are the fruit flavors already found earlier in the bouquet (cherry, plum) underlined by a touch of vanilla. The whole is very soft, round with an agreeable bitter after-taste.
