Vinification: Floating-cap fermentation, using indigenous yeasts, takes place in stainless steel tanks and lasts 14/15 days, followed by a maceration of 10/15 days. The temperature varies according to the progress of the fermentation. Malolactic fermentation is completed by the winter immediately following the harvest, after which the wine is aged in medium-sized wood barrels, no larger than 25 hL. Racking is kept to a minimum.
Wine: The Bricco Asili expresses a complex, ethereal bouquet with hints of dog rose, violet and liquorice. With its caressing, dry mouthfeel, this wine highlights excellence in the range of Barbaresco. Though capable of exciting the taste buds after just a year in the bottle, the sensations are sure to increase with additional ageing - we recommend 3 to 15 years.
Note: The Bricco Asili vineyard was planted in 1970 on a piece of land that had remained uncultivated for over thirty years, a respite for the soil that significantly influenced the longevity of the new terrain.
