Vinification: Floating-cap fermentation, using indigenous yeasts, takes place in stainless steel tanks and lasts 14/15 days, followed by a maceration lasting an additional 10/15 days.
Ageing: After malolactic fermentation is complete (December), the wine is transferred to 300 L French oak barriques (50% new 50% once-used) for 12 months ageing, followed by an additional 12 months in 25 hL wooden casks. The wines are racked as infrequently as possible (twice per year).
Wine: This Barolo reflects the most typical style of the wine’s virtuosity and aristocracy. An ethereal nose with aromas of withered roses is accompanied by a slight fragrance of underbrush, making the wine extremely well-balanced and rounded. With its excellent acidity and tannins, this Barolo can expect a very lengthy cellar life, 15-25 years.
