This wine came first out in 1997. This assemblage of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot continues to give great satisfaction.
The percentage of the parts varies each year depending on the vintage it is a decision made at the “instant” when the wine is ready to be blend.

Cabernet Sauvignon, Petit Verdot, Cabernet Franc, Merlot

The grapes destined for the production of this prized wine are Cabernet Sauvignon, Petit Verdot and a small percentage Merlot and Cabernet Franc.
The vines are of different varieties, grown with the guyot method and they grow at altitudes of 300 and 450 meters in the municipalities of Montagna and Egna. The sandy soil is found in very hot micro-zones with southern and south-western exposures.
After careful sorting in the field, the grapes are selected and fermented in open vats. To encourage the best extraction of colour and tannins, the cap of the marc is put back into the must up to four times a day for the entire period of fermentation. Afterwards, the wine is decanted into barriques where the malolactic fermentation
takes place, and it remains in small oak containers for a period of about 18 months. Finally it is aged for about a year in the bottles.

Istante is a deep dark garnet red, with fruity fragrances of dried black berries, prunes, figs and dates, with notes of green tea and bark. These aromatic sensations stay with the wine for its entire life and underline its breadth. On the palate the wine does not show its muscles but rather gets excited over its layered and elegant structure, for its fineness and for its complex and compact tannins which end in a long aftertaste.
Istante goes perfectly with game dishes and meats in salt and herb crusts, such as strong roasts and steaks. Once the full development of this wine is reached, this wine pairs wonderfully with noble and aged cheeses.
