Alzero, result of experience and knowledge in the technique of drying the grapes, a peculiarity of the whole tradition of Valpolicella.
Grapes: 40% Cabernet Sauvignon, 40% Cabernet Franc and 20% Merlot;
Winemaking: After harvesting, which takes place between late August and early September, the grapes, carefully selected, are brought into the loft and immediately put to rest in wooden boxes and on racks. Given the still warm period, the grapes to dry fully and quickly with optimum result. After crushing, carried out in late December, the alcoholic fermentation of very slowly at the hands of indigenous yeasts after 20 days of fermentation and lasts approximately 50 days.
Ageing: The grapes are dried as it wants the tradition of Amarone and Recioto, and for the refinement of this wine are used, for 30 months in French oak barrels (Limousin, Allier, Tronpais). For the next 30 months it is merged into a single mass in a Slavonian oak casks of medium size. During the various stages of maturation occur alcoholic fermentations.
Characteristics:
Colour: impenetrable
The nose: very spicy, very complex, hints of dried fruit with cocoa and vanilla calls
In the mouth: powerful, of great durability to the tasting, with jam flavor and very ripe fruit
