Grape blend: 85 % Cabernet Sauvignon 15 % Cabernet Franc
Climate: After a rainy autumn followed by a winter with fairly low average temperatures the development of vegetation in 2005 started with a delay of 15 days compared to previous years. Spring, with very good weather conditions, encouraged the vines to develop well. June and July were not really hot months, with average temperatures of around 24° C, so that the grapes ripened very slowly, without ample water supply, and in perfectly healthy conditions. August was definitely hotter with above average temperatures. The skins were healthy, giving us great quality.
Wine making: The primary fermentation took place in temperature controlled stainless steel vats at a temperature of 30° - 31° C. The maceration of the skins lasted 15 days for both the Cabernet Sauvignon and the Cabernet Franc, with a combination of pumping over and
délestage. The malolactic or secondary fermentation also took place in the steel vats.
Ageing: The wine was aged for 24 months in 225 lt. oak barriques, after which it ages a further six months in the bottle before being sold.
