Ingredients for 4 people:
- 400 g spaghetti "Pastificio Mancini"
- 15 fresh Corbara tomatoes
- Red garlic from Nubia
- Extra Virgin Olive Oil Frescolio "Frantoio Cutrera"
- 1 chilli
- Chopped parsley
- Salted ricotta and Parmigiano Reggiano
Add the fresh tomatoes in a pan with olive oil. Add two cloves of garlic and chilli. Simmer for about 10 minutes.
Cook the spaghetti Mancini for about 7 minutes until al dente. Drain and add to the pan with the sauce.
Serve with a little chopped parsley and grated salted ricotta or parmesan.
