Ingredients for 4 people:
- 350 g of whole grain Fusilli Tumminia wheat "La Fastuchera"
- 400 g tomato puree "Masseria Dauna"
- 1 zucchini
- 1 red pepper
- 1 medium eggplant
- Cracked Olives alla Paternese "SoloSole"
- Extra virgin olive oil "Valli Trapanesi" DOP
- 1 clove of Nubia
- Salt from Trapani
Lightly fry the clove of garlic in a pan with plenty of olive oil. Add the chopped vegetables and sauté on medium heat for 15 minutes. Add the tomato puree and simmer for another 20 minutes.
Cook the fusilli for about 5 minutes until al dente. Drain and add to the pan with the sauce. Stir well.
