Viticultural Practices: this wine is made from certified organic grapes from vineyards that are farmed according to biodynamic methods of viticulture (Demeter certification).

Grape varieties: Cabernet Sauvignon, Petit Verdot.

Description: very deep, intense cherry-red colour; pronounced, complex aroma, fruity and spicy, with floral notes, combined with elegant oak spice; quite powerful and rich on the palate, with an intense, strong taste and a long lasting fresh and fruity aftertaste; the tannins are rather strong though well balanced with the sweetness of the wine’s fruit structure. These elements will ensure a long maturation potential of 8 to 10 years.

Suggested foods: red meat, lamb, venison, cheese.

Origin: Römigberg estate vineyard located on the North-West of the lake Caldaro; extremely steep slopes exposed on South-Southeast; the “Herz” parcel, in the central part of the Römigberg vineyard at an altitude of 250 - 330 metres a.s.l.(820 - 1080 feet). The name of the wines takes its origin from the latin word ´COR´(heart). Soils: under the morenic deposit with loamy content, rocky and gravelly dolomitic limestone. Very intense sun exposure, warm and mild mesoclimate The central part of the Römigberg vineyard has been replanted in 1986 at high density using the Guyot trellising system (6.000-8.000 grapes/hectar).

Age of vines: 19 - 25 years.

Yield: 37 hl / ha.

Vinification: spontaneous fermentation (about 15 days) and malolactic fermentation in stainless steel tanks, maturation for 18 months in small oak barrels of 150 and 225 litres (French oak from Allier and Nevers, depending on the vintage up to 1/2 new)

Alcohol: 13.5 % by vol.

Acidity: 4.7 g / litre.
