Smoked Provola is a specialty cheese that is produced throughout Campania. It is a cheese from ancient tradition, which resembles the mozzarella in its manufacture.
The Provola is made from raw buffalo milk and in contrast to mozzarella it can be stored for some time.
The Provola is smoked for a few minutes with smoke from burning wet hay. So it gets a typical aromatic flavor and slightly caramel-like color.
