The bakery is located in Astori Coccaglio at the foot of Montorfano on the old trade route in Italy.
The bakery Astori manufactures bread, cakes, pizza and cookies made from organic ingredients.
The goal of the bakers is to revive long-forgotten wheat types and produce products that have an original taste.
At the same time they refine old recipes and are looking for suitable ingredients to offer products suitable for allergy sufferers.
The mills, where they buy their flour, use natural grinding methods. Since the grain is not heated, the yield of flour is lower, but the quality is much higher.
The whole wheat flour is milled by using a large millstones at slow rotation of the stones. The whole grain is processed from products obtained by certified organic cultivation.
The processing is done by artisan handicraft, since the application of the flours do not allow modern techniques. The bread is made with leaven and the dough is kneaded by hand.
Since 2005 the bakery has a stone oven, thanks to which the bread gets a crispy crust and a particularly intense and extremely good taste.
