The same grapes as the “secco” style are vinified in steel tanks and the fermentation is arrested as soon as a pleasing residue of natural sugar has been reached. The wine, with a bright, pale gold colour, is notable for its strong bouquet of wild flowers, honey and musk, with hints of bitter almonds; it has a medium sweet flavour, very soft, but fresh and lively with a gentle aftertaste of ripe fruit.
Orvieto Classico Amabile DOC
Grapes: 50% Trebbiano Toscano (Procanico); 20% Grechetto; 10% Verdello; 10% Malvasia Toscana; 10% Drupeggio.
Vineyard: selected hilly vineyards in the Classic DOC zone at 300 metres altitude facing South-West; the vines are trained by the spurred cordon and Guyot systems on thin,
clayey soil; the yield of wine is 70 hectolitres per hectare.
Vinification: the alcoholic fermentation, in stainless steel tanks, is stopped when there is still quite a lot of residual sugar left; ageing in stainless steel tanks.
Wine: clear, bright, golden yellow colour; strong bouquet of wild flowers, honey and musk with a hint of bitter almonds; sweet, very soft but fresh and lively, balanced flavour
with a delightful aftertaste of ripe fruit.
Alcohol: 12% vol.
Optimum keeping: 1-2 years in bottles stored horizontally in cool, dark conditions.
Food matches: biscuits, fruit tarts, fresh fruits without too much acidity (strawberries, peaches, pears) and also shellfish and fish in sauce, spicy cheeses.
Serving temperature: 10°C.
