Nebbiolo d’Alba Superiore DOC
In the local tradition, Nebbiolo d’Alba is obtained from a varied area on the right side of the Tanaro, close to Alba, between the Barolo and Barbaresco areas.
Here Nebbiolo retains a good personality, but is softer, less tannic, with a more delicate taste. Aged in small oak barrels, Cumot is a pleasant but long-lived wine, it retains its fruity and vanilla scents for a long time.
It reaches full maturity after at least one year of bottle aging. It goes well with great second courses of meat and game such as hare al civet. Excellent with cheeses from the Cuneo Alps, such as Raschera di alpeggio and Castelmagno.
It should be served at 18/20 ° C in large glasses to capture its aromas which, with aging, accentuate the spicy notes.
