Vinification Only the best grapes of the great vintages are manually harvested, with rigorous selection based on the time of ripening. Drying in a controlled environment follows for 100-120 days.
Aging Cold maceration followed by controlled fermentation 10/15 days with frequent pumping over. Aging in barrels from 225 to 500 liters for 42 months.
