BRIEF COMMENTS ON THE METHOD OF VINIFICATION:
The harvest of the various varietals took place from September 9 - October 22.
Fermentation took place in cement tank with the cap pumped over twice a day during the period of maceration which lasted 25 days.
Malolactic Fermentation took place in new 225 litre Barriques, followed by an additional aging in barrique of some 12 months. The wines were racked once during the twelve months.
The wine was then bottled and allowed to age for another six months prior to its release onto the market.
TASTING NOTES.
Colour: ruby red with violet reflections
Bouquet: complex with hints of mature fruits and vanilla
Taste full bodied and soft, suggesting a velvety sensation on the palate
Serving Temperature: 18°C/64°F
