The very hot weather characterised the entire vegetative cycle of the vines but left them unharmed. The result was a slightly early harvest of very ripe and concentrated grapes.
Fermentation and ageing were modulated to maintain the freshness of the wine.
Harvest
October 5-20
Vinification
Each vineyard was vinified separately. After destemming and light crushing, must is "sealed" with CO2 for gentle warm maceration of approximately a day. Alcoholic fermentation begins about 24-36 hours later from native wild yeasts only.
Maceration: Gentle maceration in upright open-top steel tanks for the first 6-8 days of the alcoholic fermentation
Malo-lactic Fermentation: Immediately after alcoholic fermentation in French oak casks with a capacity of 500l.
Alcoholic Fermentation: 28-30 days.
Aging: 24 months in French oak tonneaux of 500l, followed by 18 months in bottle.
Blending: Summer 1999
Bottling date: 28 July 2000
Tasting notes:
June 2012: Garnet red with slight bricking at edge. Opulent, forward nose with dried and fresh berries and cherries. The heat of the 1997 vintage shines though. Though not as complex and elegant as this vintage usually is, this is a rich, forward wine that is still holding well and is delicious now. The fat palate of ripe red fruits and meaty, mineral and chocolate flavors is framed by good acidity and ripe tannins. The finish is minerally with notes of dried black fruit.
November 12, 2009: The ripest and mellowest cherry bomb ever, though this has plenty of balance, acid and a hint of eathy wood; it avoids the "fruit-bomb" label completely. Flavors and aromas of anise, smoke, and layers of spices with dried cranberries round out the layered and complex structure. This is fully mature and represents a beautiful expression of a difficult vintage. The tannins are sweet, smooth and integrated, and show none of the astringency nor the over-the top fruitiness of the vintage. Finish is long and dry, with a notes of sweet dried fruit and wood.
